Thai Chicken Curry

The temperature is finally getting cooler around here, and so I’m pulling out the Dutch Oven and making all sorts of comforting, slow-cooking, rib-sticking meals. One of my favorites is making a chicken curry. Braising the chicken in coconut milk and warming spices makes for a perfect fall dinner.
