Welcome to the first day of the Gluten-Free Book Giveaway EXTRAVAGANZA! Every day this week, I will be sharing with you a wonderful gluten-free book, and give you a chance to win!

What could be better than that?

Today’s book is The Everything Gluten-Free Slow Cooker Cookbook by Carrie S. Forbes. Carrie is the genius behind the blog Ginger Lemon Girl. I’ve “known” (as in, we’ve never met face-to-face, but I’ve followed Carrie’s blog for several years and we’ve had multiple conversations online) Carrie for several years now, and I love her style. She’s a Southern girl, so there’s definitely a dose of comfort food in her repertoire. We also share the fun that comes with balancing a blog, healthy gluten-free cooking, and a full-time career. So when I heard that she was writing a gluten-free slow cooker cookbook, I was head over heels.

A slow cooker is something every busy cook should have in their arsenal. What’s better than dumping some ingredients in a slow cooker, turning it on, and leaving, only to return hours later to a meal? Of course, knowing just what to dump in and how can mean the difference between a so-so meal and an excellent one – and this book definitely is the way. For recipes from breakfast (think pull-apart cinnamon raisin biscuits) to main meals (lamb with garlic, lemon, and rosemary, perhaps?), to holidays (such as candied butternut squash), this book has it all.

I opted to make the Rotisserie Style Chicken (page 164). I generally roast a chicken about once a week and use it for two meals – one time as a main course, and the leftovers for salad, tacos, or enchiladas. I wanted to see if this version measured up.

Oh boy, it did! I’ve tried to cook chicken in the slow cooker before, only to find it dry and overcooked. Not this one – it was moist, tender, and flavorful. It was a simple, comforting main course, but also was perfect once deboned and used in another recipe. I love that I now have this reliable alternative to my usual roasting – especially when I am using the oven for other things, or am in a time crunch.

    Chicken thighs in an easy curry sauce (just add curry powder to premade alfredo sauce) was my favorite easy crockpot dinner before going GF. I’ll have to see if there’s GF alfredo sauce (or make it from scratch or a GF packet mix).

    My favorite meal is soup of any kind, but I usually make a “dump soup”. I just throw in some spices that sound good and whatever veggies I have laying around. It never disappoints!

    Chili, chicken, round steak with peppers and onions, soups, roast with potatos, carrots, and onion….. I USE my crockpot! Quick and easy and there is nothing like coming home on a cold dark rainy nasty day and having the house smell so good with dinner ready to go and enough for leftovers for the next day………

    Puerco pibil! I saw the Robert Rodriguez video for it and it works in a slow cooker just fine if you don’t want to use an oven. It is a very delicious thing.

    My favorite dish to make in a crockpot is condensed coconut milk but since that’s not what you asked it’s gotta be CHILI!

    I’m a big fan of short ribs in the crock pot with wine, coconut milk, beef stock, mushrooms and onions….So good with cauliflower rice on a cold day. Thanks for the chance!

    Love my slow cooker… I love making roasts in my crockpot, and also bone broths. That is what is gets used or the most!

    Everyone loves my spaghetti sauce recipe. It’s one of the first recipes I tried in a crockpot and I make it several times a year. Now, of course, I put it over GF pasta.
