Gluten-Free Book Giveaway EXTRAVAGANZA: Super Healthy Cookies

Update: This giveaway is now closed and the winners have been notified. Thank you!

Here we are, on Day 3 of the Gluten-Free Book Giveaway EXTRAVAGANZA! If you missed out on Day 1 or Day 2 you’re not too late – check out my review of The Everything Gluten-Free Slow Cooker Cookbook, and my review of The Gluten-Free Edge, and enter for your chances to win!

Today’s book, Super Healthy Cookies: 50 Gluten-Free, Dairy-Free Recipes for Delicious & Nutritious Treats is my kind of book! I’m all about having my cake (well, in this case, cookie) and eating it too – and this book is essentially that kind of book! Feel like you’re being indulgent, but in fact, these cookies are chock full of nutrient-dense ingredients! Not that I would expect anything less from Hallie of Daily Bites. She is all about cooking with healthy, wholesome foods. Her first book, The Pure Kitchen (which I reviewed as well), was full of real food recipes.

This time, however, she really hit it out of the park. I’m not sure I really need to say more, because the title of the book says it all. Fifty recipes for healthy cookies? Oh, yeah! I had trouble trying to decide which cookie to make. Finally, I went for those all-time familiar favorites – peanut butter and chocolate – and made her Chocolate-Drizzled Peanut Butter Cookies (page 109).

Of course, anything with chocolate drizzled on top is awesome, but truth be told, I loved these equally as well without the chocolate adornment. Either way, they were spectacular, and something I’d be happy to serve as a treat or an after-school snack for the kids, since there is no refined sugar or starch. Win-win!

I know it’s trite, but I have to go with a classic–chocolate chip cookies. They are my weakness, actually. Although I haven’t had a good one since going GF a few months ago. (I’ve been DF for 8 years now.)
