Gluten-Free Book Giveaway EXTRAVAGANZA: Paleo Slow Cooking

Today’s book, Paleo Slow Cooking: Gluten-Free Recipes Made Simple by Chrissy Gower, is a great book for everyday meals. As I’ve mentioned before, I eat mostly grain-free  and legume-free. In other words, paleo. Sometimes, when following a paleo diet, it’s hard to come up with simple dishes. Where we used to rely on pastas and sandwiches to come to the rescue for easy meals, now our whole frame of mind has to shift. This book definitely alleviates a lot of stress that comes with that changing of one’s habits. There are delicious recipes for breakfasts, soups, stews, main courses, vegetables, salads, and of course, desserts. Most use the slow cooker, but a few are just simple, quick recipes that will take hardly any effort at all.

I’m definitely eyeing the breakfast recipes for the future (for example, there’s a Denver-style Frittata that’s calling my name!), but as I’ve had a busy schedule lately, I opted to use the book for its primary purpose where I needed it most – to save me time on dinner.

So I went with a family favorite – Spaghetti with Meat Sauce (page 114). Truthfully, this is a recipe for the meat sauce, and Chrissy gives you options for your noodles, such as spaghetti squash (one of my personal favorites), or zucchini noodles. (I’ve also recently fallen in love with kelp noodles, but that’s another story for another day.) I opted to use my food processor to chop the vegetables into tiny bits to “hide” them in the sauce. I think it would be equally delicious with larger pieces, but we enjoyed it as a smoother sauce as well. I especially love that the slow cooker allows for the sauce to simmer for hours, mingling the flavors well. It’s almost like having an Italian grandmother in my kitchen all day!

    I love rice bowls for just about any meal. Brown rice, some beans and then any mix of vegetables/meat can be tossed in.

    My favorite meal is turkey meatloaf, made with apples and quinoa flakes instead of bread crumbs…delicious! My red meat lover husband prefers that over beef meatloaf!

    This is hard! :) I absolutely love my Mom’s korean spicy fish stew with radish… so incredible!
