Today’s book, Nourishing Meals: Healthy Gluten-Free Recipes for the Whole Family by Alissa Segersten and Tom Malterre was the book that I loved to curl up with on the couch. After all, it’s a massive book with 300 incredible, healthy recipes. Not that I’d expect anything different. Alissa and Tom have published another incredible book, The Whole Life Nutrition Kitchen, and I own that one and love it as well. Alissa and Tom really outdid themselves this time around though. There are recipes for breakfasts, tons of healthy bread recipes, smoothies, beverages, main meals, vegetables, salads, and more. I took out my sticky notes and marked at least a dozen and a half pages. These recipes all sounded so enticing.
Finally, though, I settled on making one to share. It was a Saturday morning and breakfast time at the Tasty Eats At Home household, and I wanted something a little special. However, it couldn’t be sweet – my husband really isn’t a fan of sweets, especially not for breakfast. So when I remembered that I’d marked a recipe for Coconut Flour Biscuits, I immediately snapped into action (okay, after a bit of coffee) and threw these together. They were easy to make, and even though they were grain and dairy-free, they were fluffy, moist, and tender. I enjoyed mine with some easy peach freezer jam, but they’d also be equally delightful with eggs and bacon or other, more savory fare.
