Tropical Traditions Coconut Oil Giveaway!

If you’ve been following along at all lately, you may have heard something about my decision to stop eating dairy products. It may or may not be forever, but for now, my body feels best without it. However, this doesn’t mean I’m giving up on baked goods and such! Many times, I want to modify a recipe that calls for butter, and shortening or canola oil just doesn’t seem right. This is when I love to use virgin coconut oil. It does have the flavor of coconut, but when you’re incorporating it into baked goods, the resulting flavor is not really coconut-y at all. I’ve used it successfully in muffins, cakes, cookies, and even brownies. I even cook with it in savory dishes, as long as I don’t turn the heat up too high. And in the winter, when my skin turns dry, it’s a good salve that really seems to help moisturize my skin.

    I would make Sour Cherry & Almond Biscotti using coconut oil instead of butter – just saw it on some baking blogs and it looks delicious!

    I’m dairy intolerant so I substitute it for oil. I particularly like it in baked good, for roasting potatoes and popping corn. It’s also a great binder in flapjack/ homemade granola bars. I have yet to try it on toast but think it would be wonderfult with cinnamon and nuts.

    I’ve been looking at different ways of eating for my husband and I. I really am interested in going more towards whole foods, especially since he has celiac/sprue. One of the plans I’ve been considering recommends coconut oil over canola oil, which I’ve used for many years. This would be a great way for me to give it a try.

    I’ve been a fan of coconut oil for years now and use it in some very creative ways. It’s good stuff and very healthy. I buy it by the bucket! Good to lather on your hair for a deep moisturizing treatment, too. :-)

    I just ran out of my TT coconut oil, so this is very timely! I think I’ll make my gf/df brownies with coconut oil again. :-) When I have it, I use coconut oil as much as possible. I had some left over by my nightstand. I use that all the time for moisturing. :-)

    I have a lot of zucchini right now so I would use the oil in one of my recipes for chocolate zucchini cake.

    I would love to make pumpkin bread with this oil. Think of how delcious the flavors would be together and the moisture.. awh.. yum!!
